Ouăle se bat extraordinar de bine cu praful de sare și cu zahărul, zahărul Bourbon, până când totul devine o spumă consistentă. Se adaugă iaurtul și de bate iar, dar mult mai puțin. Apoi, se adaugă făina, încet, în ploaie și se amestecă lejer până când aluatul este omogen. Nu va fi extra-fluffy, dar este aerat și ferm.

⦁ două linguri de făină
⦁ 3 linguri de zahăr
⦁ 500 ml lapte
⦁ 50 g unt
⦁ un plic de zahăr Bourbon
⦁ esență de lămâie sau coaja de la o lămâie
⦁ zeama de la ½ lămâie
Ouăle se amestecă împreună cu făina și cu zahărul. Se adaugă laptele și se dă totul la foc, amestecând continuu. Când crema s-a întărit, se dă de pe foc, se lasă câteva momente la răcit, după care se adaugă untul, zahărul Bourbon și esența și zeama de lămâie.

Cele două compoziții se toarnă alternativ într-o tavă de dimensiunile 20/30 cm, după care se așază 55 de vișine cu sâmburii scoși plus 9 caise relativ mici, tăiate în trei.
