Ruladă cu gem şi glazură de ciocolată
Prăjitura aceasta s-a terminat în timp record, trei copii fiind autorii „măcelului”.
Rulada e foarte uşor de făcut şi constă într-un blat, uşurel rulat după ce a fost garnisit cu gem de fructe şi acoperit pentru deliciul copiilor cu un amestec de ciocolată neagră şi unt. Gemul potrivit ar fi unul acrişor, cum sunt cel de caise (ideal, după părerea mea), de vişine, zmeură sau prune.
Blatul, atâta vreme cât e cald, are consistenţă elastică, motiv pentru care e uşor de modelat sub formă de ruladă. Secrete nu prea sunt, poate doar acela al încorporării cu răbdare a făinii în amestecul bine bătut de ou şi zahăr.
Glazura de ciocolată se aşează cu grijă de-a lungul prăjiturii, în partea inferioară la inceput (în zona în care foaia blatului se termină de rulat, pentru sigilarea şi păstrarea formei), se lasă la frigider să se întârească, apoi partea deja acoperită se aşează la bază şi se continuă cu glazurarea celeilalte jumătăţi de ruladă. Dacă peste ciocolata încă moale, se trec dinţii unei furculiţe, se obţine efectul de mai jos.
Surplusul de ciocolată ar trebui îndepărtat, dar nu şi în familia mea, unde „retuşurile” s-au făcut cu degeţelele nerăbdătoare ale piticilor, care nu înţeleg de ce trebuie să aştepte ca glazura să se întârească.
Ingrediente şi cantităţi:
Pentru blat:
- 5 ouă la temperatura camerei;
- 5 linguri de zahăr;
- 5 linguri de făină proaspăt cernută;
- un praf de sare.
Albuşurile se bat spumă, ca pentru bezea, cu un praf de sare şi cu zahărul, care se adaugă treptat. Apoi vine rândul gălbenuşurilor, puse unul câte unul. La final se adaugă făina, lingură cu lingură, amestecând cu grijă de jos în sus, astfel încât aluatul să rămână pufos.
Pentru umplut:
- un borcan mic de gem (cam 300g.).
Pentru glazura de ciocolată:
- 90 g ciocolată;
- 60 g unt gras.
Ciocolata şi untul se topesc pe baie de aburi.
