Melci cu scorțișoară

 

Pentru aluat:

– două ouă;

– 5 linguri zahăr;

– 300 ml lapte;

– 25 g drojdie (7 g drojdie uscată);

– ½ linguriță sare;

– o lingură de ulei;

– coaja rasă de la o lămâie;

– un plic de zahăr Bourbon;

– făină cât cuprinde (~ 500 g).

 

Pentru umplutură:

– 80 g unt la temperatura camerei;

– zahăr brun și scorțișoară, pentru presărat peste blat;

– stafide (opțional).

 

Pentru glazură:

– 6-7 linguri zahăr;

– apă foarte puțină, cât să umezească zahărul (1-2 linguri);

– o linguriță scorțișoară.

 

  1. Laptele se încălzește. În el se topește zahărul, apoi se dizolvă drojdia.

Într-un ligean se pune o cană de făină, se face un gol în mijloc unde se așază laptele. Se adaugă ouăle, sarea, uleiul, coaja de lămâie și zahărul Bourbon.

Se omogenizează bine, apoi se adaugă făina și se amestecă până când se obține un aluat elastic și nu prea tare (trebuie să se mai lipească puțin de mână).

Aluatul se așază în lighean și se lasă la dospit două ore.

 

  1. Pe masa de lucru se toarnă puțin ulei, se răstoarnă aluatul și se întinde o foaie dreptunghiulară cu grosimea de ~ 5 cm.

Aceasta se unge cu untul moale și se presară cu zahăr și scorțișoară. Opțional, se pot adăuga stafide.

Aluatul se ruleazǎ strâns, pe lung. Din ruloul obținut se taie bucăți egale de ~ 4 cm.

Melcii se așază în tava tapetată cu hârtie de copt, la distanță unele de altele. Se coc la 1800 C cu ventilație, cam 25 de minute.

 

  1. Între timp, zahărul și apa pentru glazură se fierb pe foc, până când se topește zahărul. După ce siropul s-a răcit puțin, se adaugă scorțișoara.

 

  1. Melcii se ung cu glazura de mai sus. Dacă glazura se întărește (răcește) până se coc melcii, se poate pune înapoi pe foc, cu puțină apă.
