Cheesecake cu pere caramelizate și alte bunătăți

  • 3-4 pere de toamnă târzie, curățate de coajă, tăiate pe jumătate, curățate de sâmburi și tăiate în semilună, cu pulpa de 4-5 mm;
  • 150 g zahăr brun caramelizat, peste care se adugă 300 ml apă, care va forma un sirop fluid;
  • Perele tăiate felii se clocotesc maxim 5 minute în siropul de caramel.

 

  • O tavă de tort detașabilă Ø 24 cm se unge cu unt pe fund și pe margini, apoi se tapetază bine cu zahăr brun.

 

  • 500 g brânză dulce;
  • 100 g smântână fermentată;
  • 200 ml smântână dulce;
  • 1 ou;
  • 1 lingură de făină;
  • 5 g praf de copt (jumătate de pliculeț);
  • Un praf de sare;
  • 5 linguri de zahăr;
  • 2 pliculețe de zahăr Bourbon sau esență naturală;
  • 20 ml esență naturală de portocale.

 

  • Toate cele de mai sus se amestecă fooooooarte bine, de prefecrat cu blenderul.

 

Perele se aștern cuminți în tava de tort tapetată, sub formă de cerc (petale drăguțe de pere tomnatice). Peste pere se răstoarnă binișor crema de brânză.

Tava de tort se așază într-o tavă de cuptor în care se toarnă 500 ml apă. Totul se coace la 1800C cam 50-55 de minute.

După ce s-a răcit, prăjitura se răstoarnă pe un platou și se ornează cu alune prăjite și zdrobite și bucăți de ciocolată tocată.
